Roasting the tomatoes and peppers for salsa.
Chef Pablo demonstrates how guacamole has all the colours of the mexican flag using red tomatoes, green peppers and white onion.

We made 5 different salsa's and some looked like a hot sauce rather than a salsas but chef Pablo explained a salsa is a condiment not just a chip dip. They are used on meats as a way to enhance the flavour.

Some of our favourite things about spending time in Mexico are Taco's, Salsa's, Margaritas, the warm weather, beautiful beaches, the warm ocean and the friendly Mexican people.
